1 cup butter (softened)
2½ cups sugar
4 large eggs
2½ tsp white vinegar
2 tsp vanilla extract
2 tsp red food coloring
5 cups flour
½ cup baking cocoa
4 tsp baking powder
½ tsp salt

Filling
5 oz farmer cheese
3 oz cream cheese (softened)
⅓ cup sugar
1 large egg
1½ tsp vanilla extract

Directions:
Directions:
1. In a large bowl, beat the butter and sugar until crumbly. Add eggs, 1 at a time, beating well after each addition. Beat in vinegar, vanilla and food coloring. In another bowl, whisk flour, cocoa, baking powder and salt; gradually beat into creamed mixture. Cover and refrigerate until dough is firm enough to shape for 1 hour.
2. Place filing ingredients in a food processor; process until creamy. Transfer into small bowl. Cover and refrigerate until chilled for 1 hour. Preheat oven to 350º.
3. Using hands dusted with flour, shape dough into 24 balls; flatten each slightly. Spoon 1 tbsp of filling into center of balls; wrap the dough around the filling to cover completely. Place 3 in apart, seam side down on parchment lined baking sheets.
4. Bake for 17- 20 mins or until the tops appear dry and the edges begin to crack. Cool on baking sheets for 5 mins before removing to wire racks. Store cookies in refrigerator.
