1 (14 oz) can sweetened condensed milk
1/3 cup butter
1/3 cup brown sugar
3 tablespoons milk
1 teaspoon vanilla
1 cup peanuts, roughly chopped
1-2 sleeves Ritz crackers

Directions:
Directions:
Line a cookie sheet with parchment paper and arrange crackers in a single layer.
In a small saucepan, combine sweetened condensed milk, butter, and brown sugar. Cook over medium heat for 7-8 minutes, stirring often.
Reduce heat to low and whisk in milk, vanilla, and peanuts until smooth. Cook for 2 additional minutes or until mixture is thick, then remove from heat.
Use a cookie scoop to top each cracker with the caramel mixture.
Allow cookies to fully cool, then store in an airtight container.
