2 sticks (1 cup) of unsalted butter, softened 2 eggs
1 cup dark brown sugar 1 cup granulated sugar
1 tsp. vanilla extract 2 cups all-purpose flour
1 tsp. baking powder ½ tsp. baking soda
1 tsp. cinnamon ½ tsp. salt
1 cup oatmeal 1 cup flake sweet coconut
1 cup toasted pecans 1 cup white chocolate chips
½ cup dried cranberries

Directions:

Cream butter and sugars together. Add eggs one at a time then add vanilla extract. Add dry ingredients along with the oats. Then add the remaining ingredients. Mix just until mixed together; do not over mix. Scoop and bake at 300 degrees for 18-20 min. A small cookie scoop yields 8 dz.

To make ahead: Scoop, freeze and bake later or divide dough into 3 disks; freeze and scoop when ready to bake.
