5 lbs. prepared pizza dough
2 containers Ricotta cheese
3 lbs. chopped Soppressata
4 whole eggs: lightly beaten
1 Cup Grated Pecorino Cheese
1 Tbsp. black pepper (to taste)
1 ½ Tbsp. salt (to taste)

1. Roll out dough into an oval shape

2. Mix all other ingredients completely, this is your filling

3. Fill half of your dough oval with filling, should be 1 - 1 1/2 in thick, fold dough over filling

4. Use fork to poke vent holes in filled portion, use underside of fork to “stamp” closed your dough

5. Cook for 45-60 mins 375º F until dough is visibly browned

6. Allow to cool for about 2 minutes, take another beaten egg and brush on top
