⅔ c. butter
2 eggs
3 c. sifted flour
1 ½ tsp. baking powder
⅔ c. sugar
1 tsp. vanilla
½ tsp. salt

Marshmallow Mixture:
2 tbsp. gelatin
½ c. cold water
2 c. sugar
¾ c. boiling water
½ tsp. salt
1 tbsp. vanilla

Directions:
Directions:
Cream butter and sugar thoroughly. Beat eggs. Add to creamed butter and sugar, add vanilla, then flour, baking powder, and salt, Mix well. Chill dough for 2 hours, then roll out to about 1/8″ thick. Cut with cookie cutter. Bake for ten minutes at 350⁰F. Do not over bake. Top with marshmallow mixture.
Marshmallow Mixture:
Place cold water in bowl, sprinkle the gelatin over water, and allow to stand for a few minutes. Combine sugar and boiling water and stir until sugar is dissolved, bring to a boil, keep boiling until mixture reaches the thread stage. Remove from stove and add soaked gelatin, stir until gelatin is dissolved. Let mixture cool. Then add salt and vanilla. Beat mixture until thick and fluffy and cool. Place on cookies and add coconut.
