2 c. all-purpose flour
¼ tsp. baking powder
¼ tsp. salt
1 c. unsalted butter, softened
½ c. sugar
1 T. orange zest
½ tsp. vanilla extract
1 c. dried cranberries, chopped
sanding sugar to finish if desired

Directions:
Directions:
Preheat oven to 325º. Whisk together flour, baking powder and salt. Cream butter, sugar, orange zest and vanilla until smooth. Gradually add the dry ingredients, mixing well until combined. Fold in the chopped, dried cranberries. Roll dough into 1 inch balls and place on a lined baking sheet, about 2 inches apart, flattening slightly.

Or, my preferred method: Gather dough and divide into three separate mounds. Roll each mound into a log about 1½ inches in diameter. Wrap in plastic or freezer wrap.
When ready to bake let the dough logs thaw out a bit. Roll in sanding sugar if desired for an extra touch. Cut logs into rounds and place on a lined baking sheet. Bake for 18-20 minutes until edges are slightly golden. Cool on a wire rack.
