- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup powdered sugar (for rolling)

1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
2. Beat in the eggs, one at a time, followed by the vanilla extract, lemon zest, and lemon juice.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
5. Cover the dough with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
6. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
7. Roll the chilled dough into 1- inch balls and then roll each ball in powdered sugar, coating evenly.
8. Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
9. Bake in the preheated oven for 10-12 minutes, or until the edges are set and lightly golden.
10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
