1¾ c. granulated sugar
1 c. firmly packed brown sugar
1 c. vegetable oil
3 eggs
1 tsp. vanilla extract
1 c. flour ( can use gluten free)
1 tsp. baking soda
½ tsp. salt
4 c. quick-cooking oats
1 c. sweetened shredded coconut

Directions:
Directions:
Combine 1 c. granulated sugar, brown sugar, and oil. Beat until well blended. Add eggs and vanilla. Beat until smooth. In a separate bowl combine flour, baking soda, and salt. Add dry ingredients to sugar mixture and stir until a soft dough forms. Stir in oats and coconut until well blended.

Shape dough into 1-inch balls and roll in remaining ¾ c. granulated sugar. Place balls 2 inches apart on greased baking sheet and flatten with bottom of a glass dipped in sugar. Bake at 350º for 8-10 minutes or until edges are lightly browned.
