12 ounces chocolate chips
1 1/2 pounds chocolate flavored almond bark
1 pound Ritz crackers
2 cups peanut butter

Directions:
Directions:
Line 2 large baking sheets with parchment or wax paper. Set aside.

Make sandwiches by spreading peanut butter in between 2 crackers. Set aside.

Combine the chocolate chips and almond bark in the top of a double boiler set over simmering water. Stir until fully melted. Use a fork to dip the cracker sandwiches in the chocolate; tap the dipped cookies against the side of the double boiler to remove excess chocolate. Set on prepared baking sheets and top with sprinkles if desired. Refrigerate until set.

If using sprinkles, you'll want to sprinkle as you dip rather than waiting until they're all dipped, then sprinkling. They tend to set up quickly so the sprinkles won't adhere if you wait too long.
