1 C unsalted butter, chilled and cubed
1/2 C sugar
1/2 tsp salt
2 1/4 C flour
2 Tbs finely ground espresso beans

Chocolate:
9 oz semisweet chocolate, chopped
1 Tbs shortening

Directions:
Directions:
Preheat oven to 300º. Line baking sheet with parchment paper.

Using stand mixer, combine butter, sugar, and salt on low speed 1-2 minutes. Add flour and ground espresso and mix on low speed until dough has just pulled together, about 3 minutes.

Roll to 1/4 inch thick on lightly floured surface. Cut into squares or use cookie cutter. Chill at least 20 minutes.

Bake 30-60 minutes until golden the bottom and edges. If cookies are done before 3 minutes, reduce oven to 275º. If they take longer than 1 hour, increase oven to 325º. Let cool on wire rack.

Melt chocolate and shortening until smooth. Dip each cookie half-way in chocolate and let set up on parchment paper.
