1/4 cup unsalted butter
1/2 cup diced onion
1 cup shredded carrots (cutup matchstick works great)
2 1/2 - 3 cups broccoli florets, chopped
1 1/2 cup chicken broth
1 cup milk
1 cup heavy whipping cream
1/4 cup all purpose flour
1 1/2 tsp kosher salt
1/2 tsp pepper
pinch of crushed red pepper flakes
2 cups shredded sharp cheddar cheese

Directions:
Directions:
In a large pot over medium-high heat, melt butter, and add onion, carrots, broccoli and cook to soften. Slowly add broth, milk, and heavy cream. Sprinkle with flour and add salt, pepper, and red pepper flakes. Continue stirring and heating until thickened (10-15 minutes). Now add cheese.

To fill a crock pot, it will take 3 batches.

To thin while warming soup use a combination of chicken broth and heavy whipping cream.
