4 Eggs
2 cup sugar
1 cup oil
3 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup buttermilk
2 tbsp coconut flavoring
1 cup coconut

Directions:
Directions:
Whip eggs, sugar, oil and flavoring in a bowl. Sift flour, salt, soda and baking powder. alternate adding flour mix and buttermilk until gone. Add coconut and mix well. Grease pans. Bake at 350º F for:

tiny pans = 45 minutes
1 lb loaf pans = 1 1/2 hours
2 lb loaf pans = 2 hours

Use a toothpick to check for doneness.
