1 head of cauliflower
4 cups chopped onion
1 large cabbage shredded
3 chopped green peppers
3 chopped red peppers

BRINE SOLUTION
1 gallon water
1 1/2 cups salt

SAUCE
1 cup flour
6 Tsp dry mustard
1 Tbsp ground turmeric
4 cups light brown sugar
1 cup granulated sugar
2 Tbsp celery seed
2 quarts vinegar

VEGETABLES:
Cover and soak all vegetables in BRINE solution for 24 hours. Drain and rinse thoroughly (3 or 4 times).

BRINE
Mix water and salt and stir until salt is dissolved.

SAUCE
Mix dry ingredients together, stir in 1 Cup of vinegar then 2nd Cup of vinegar, Bring other 6 cups of vinegar to a boil. Stir in small amount into 1st mixture, then pour the rest together and cook until thick.
Pour over vegetables and cook until vegetables are softened 15 or 20 minutes (be careful not to overcook)

Pour into clean sterile jars and add tops. Process 15 minutes.

This was always served as a condiment at Thanksgiving and Christmas. It is also great to add to egg yolks for deviled eggs and to potato salad.
