4 Thick center cut boneless Pork Chops
2 Tbsp. Butter
1 Tbsp. Olive Oil
1 Tsp. Black Pepper
1 Tsp. Salt
1 Tsp. Onion Powder
½ Tsp. Garlic Powder
3 Tbsp. All Purpose Flour
1½ Cup Chicken Stock
2 Tbsp. Heavy Cream
Fresh Parsley for garnish (Optional)

1. Melt the butter in a medium skillet and add the Olive Oil.
2. Pat the pork chops dry and season with the salt, pepper, and onion powder.
3. Add the pork chops to the butter/oil and cook until browned then remove from the skillet and save for later. Do not drain the juices or grease.
4. Add the flour and whisk completely in the butter/oil until absorbed.
5. Pour in half of the chicken stock to the roux, stirring consistently.
6. Add ½ Tsp. of onion powder, garlic powder and fresh ground black pepper.
7. Add the remaining chicken stock and whisk until smooth and then add the heavy cream.
8. return the pork chops to the gravy mixture and cook on low until the chops are done (internal temperature at least 145º)
9. Serve over potatoes or rice and garnish with fresh parsley.
