Blackberry Balsamic Vinaigrette

½ C olive oil
3 Tbsp balsamic vinegar
2 Tbsp blackberry jam
1 tsp or so minced garlic (I used pre-minced)
Oregano
Salt and pepper

Assorted veggies to be grilled (eggplant, zucchini, squash, portabella mushrooms, peppers)

Directions:
Directions:
Combine vinaigrette ingredients in a mason jar. Shake until well combined.
Season to taste.
Pour vinaigrette over sliced veggies and marinate 20-30 minutes.

Grill over medium heat.

The veggies are really good chilled and served on a toasted sub roll with muenster or mozzarella cheese.
