2½ cups flour
1½ cups sugar
1 Tbsp. pumpkin pie spice
1 tsp. soda
2 eggs lightly beaten
1 cup solid pack pumpkin
½ cup vegetable oil (or) ½ cup apple sauce
2 cups peeled and finely chopped apples

Topping:
2 Tbsp. flour
¼ cup sugar
½ tsp. cinnamon
4 Tbsp. butter
Directions:
Directions:
Mix eggs, oil (or apple sauce) and pumpkin well.
Add dry ingredients and mix well. Add apples.

Topping:
Combine flour, sugar and cinnamon.
Cut in butter until mixture is crumble.
Sprinkle on top of muffins.
Bake at 350º until a tooth pick comes out clean.
