2 lb frozen hash browns, thawed
1/2 c chopped onion
2 tsp salt
2 c grated Cheddar cheese
1 c sour cream
1 (10 3/4 oz) can cream of chicken soup
1/2 c butter, melted
crushed croutons or bread crumbs

Directions:
Directions:
Mix together hash browns, onion, salt, and cheese. Place in a 2 qt buttered casserole. Combine sour cream, chicken soup and melted butter. Spread mixture over potatoes. Top with crumbs. Bake at 350º for 45- 60 minutes.

These are really good. I tried to make them once for Thanksgiving when Ken lived in Connecticut. Kris joined us also. The problem was, the grocery store there didn't carry the frozen hash browns. I tried to rice raw potatoes and use them instead. They were awful- they didn't cook, and turned a funny gray color... Truly embarrassed in front of Ken and his friends!
