Ingredients: 2 boxes lemon cake mix 4 eggs ⅔ C oil

Directions: |
Directions:Preheat oven to 350 degrees. Line baking sheet with parchment paper or spray with nonstick cooking spray. Combine cake mixes, eggs, and oil. Mix on low speed until fully combined. Scoop and roll the dough into 1” balls, then place on the prepared baking sheet about 3” apart. Bake for 8-10 minutes, or until lightly browned and set on the edges. Remove from the oven and let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely before frosting. |

Lemon Cream Cheese Frosting |

Ingredients: ½ C butter, room temperature 1 - 8 oz cream cheese, softened 1 Tbsp lemon zest ¼ lemon juice 2-3 C powdered sugar (may even require a little more than this if not stiff enough)

Directions: |
Directions:Mix butter and cream cheese. Beat until light and fluffy, about 2-3 minutes. Add powdered sugar, lemon zest, and lemon juice. Mix on low until fully incorporated. Then beat on high for about 30 seconds until light and fluffy again. Add more powdered sugar until stiff peaks form. Place frosting in between 2 cookies. Serve immediately or put them in an airtight container in the fridge for 3 days. These cookies can also be frozen for a couple weeks. |
