500g all-purpose flour
200g cold butter, cubed
2 eggs
1 tsp salt
1 tbsp sugar
1 tsp baking powder
1/4 cup cold water

Filling
350 g ground beef
1 potato - peeled and diced
1 large onion - chopped
1 large carrot - diced
1 cup water or beef broth
salt to taste
pepper to taste
1 tsp thyme
2 tbsp flour
2 tbsp oil
1 egg for brushing

In a large bowl, mix flour, sugar, salt, and baking powder.
Add cubed butter, rub together with flour until a crumbly texture forms.
Beat eggs with cold water. Add to flour mixture. Mix until dough is formed. Cover for 30 minutes.

Filling
In a large frying pan, heat oil. Add onion and sauté for 5 - 6 minutes.
Add diced carrots, cook for 3 - 4 minutes.
Add meat, keep stirring to break it apart for 4 - 5 minutes. Add broth.
Season with salt, pepper, thyme, and flour to thicken. Cover to simmer for 5 minutes.

Divide dough into 4 pieces. Roll dough in 1/8 inch thickness. Cut a round shape with your desired size. Place 1 - 2 tbsps of meat filling in the center and fold dough over. Seal with a fork. Repeat for each piece of dough.
Poke pies with a fork to create a steam outlet.
Brush with egg.
Bake for 25 - 30 minutes at 190º until folder brown.
Cool before serving.
