1 cup granulated sugar
1 cup butter softened
3 oz. cream cheese softened
1/2 tea. salt
1/2 tea. almond extract
1/2 tea. vanilla extract
1 egg yolk (reserve the white)
2 1/4 cups all purpose flour

Assorted sprinkles/colored sugar/icing

In a large bowl, combine sugar, butter, cream cheese, salt, almond and vanilla extracts and the egg yolk.

Lightly spoon flour into measuring cup/level off and add to the butter mixture - blending well.

Chill dough for 2 hours.

Preheat oen to 375º

On a lightly floured surface (I put wax paper down on the counter top first and then sprinkle it with flour), roll one-third of the dough to 1/8" thickness. Cut into desired shapes and place one inch apart on a parchment lined baking sheet.

Beat the egg white slightly and brush the top of each cookie with the egg white and then sprinkle with sugar/sprinkles. If you frost the cookies, there's no need to use the egg white wash and sprinkles before baking.

Bake for 8-11 minutes (it just depends upon the thickness of the cookies and your oven temperature).

Watch the first batch closely - the cookies should be golden brown and smell delicious as you take them from the oven!
