1 c. shortening
1 1/2 c. brown sugar
2 eggs
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. diced fresh rhubarb
3/4 c. flaked coconut

Frosting:
3 oz. cream cheese, softened
1 tbsp. butter, softened
3 tsp. vanilla
1 1/2 c. powdered sugar

In a large mixing bowl, cream shortening & brown sugar. Beat in eggs. In another bowl, combine the flour, baking soda & salt. Gradually add flour mixture to creamed mixture. Stir in the rhubarb & coconut. Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 350º for 12-15 minutes or until lightly browned. Cool.

Frosting:
In a mixing bowl, beat the cream cheese, butter & vanilla. Gradually beat in the powdered sugar until smooth. Spread over cookies. Store in fridge.
