1-1/3 cup vegetable oil
1 well beaten egg
1 tsp. almond extract
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
blanched almonds

Directions:
Directions:
1. Cream sugar with oil until very light and fluffy.

2. Beat in egg, and almond extract

3. Sift together flour, baking soda and salt and stir into creamed mixture

4. Form into 1" balls and place on greased cookie sheet
flatten with hand and make a thumb pdepression - put an almond in the middle

5. Bake 350º for 20 minutes
