1 carrot
1 onion
3 cloves garlic
2 handfuls dry porcini mushrooms
1 T. fresh oregano leaves
a few sage leaves
1 T. fresh marjoram
2 T. fresh Italian parsley
1 T. fresh rosemary
2 dry red peppers
10 small cans (8 oz) tomato sauce
2 bay leaves
4-5 cans water
3-5 lb chuck roast

Directions:
Directions:
Soak the dried mushrooms in boiling hot water, set aside. Chop carrots, garlic and onion finely. Brown the chuck roast in a large heavy pot or dutch oven, then pull it out and set aside. In the same vessel, sauté onions, carrots and garlic in some olive oil and the juices from the roast. Add tomato sauce, water, spices, mushrooms and return the roast to the pot. Simmer, without cover, for about 4 to 5 hours. Remove bay leaves and roast. Serve pasta with the sauce as a primo piatto, and sliced roast as a secondo piatto.
