2 cups cooked chicken, diced
1 can white beans, drained
1 can corn drained, or 1 1/2 cups frozen corn
5 sliced/diced carrots
1 large white onion, diced
1 can kidney beans, drained
1 can crushed/diced tomatoes
1 box frozen, chopped spinach
6 celery ribs, sliced
1/4 cup barley (pearl is best)
1 chicken bouillon cube
1 teaspoon pepper
1 medium pinch of red pepper flakes
1 teaspoon poultry seasoning
1 teaspoon Lawry's seasoned salt
1 teaspoon Italian seasoning
1/4 cup lemon juice, if available

Directions:
Directions:
Start with a large pot 1/3 full of water.
Add all ingredients.
Simmer 1-2 hours with barley.
If cooking the day before, add barley on serving day and simmer about 45 minutes.
Add more water if necessary.
When serving, top with Parmesan Cheese.
