1 ½ cups Brown Sugar, packed
¾ cup Butter, cubed
2 tbsp Water
2 cups (12 oz) Semi-sweet Chocolate Chips
2 Eggs
3 cups Flour
1 ¼ tsp Baking Soda
1 tsp Salt

Filling:
⅓ cup Butter, softened
3 cups Powdered Sugar
3 - 4 tbsp Milk
Dash Salt
⅛ tsp Peppermint Extract
Food Coloring, if desired

Directions:
Directions:
In a small saucepan, combine the brown sugar, butter and water. Cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in the chocolate chips until melted and smooth. Transfer into a large bowl; cool slightly.

Add eggs one at a time, beating well after each addition. Combine the flour, baking soda and salt; gradually add to chocolate mixture. May need to chill the dough for about 1 hour (not overnight). Drop by rounded teaspoonfuls onto greased baking sheets. (I cut the rounded cookie dough in half to make smaller cookies).

Bake at 350º for 8 to 10 minutes or until set. Remove from oven and flatten cookies slightly with a glass. Cool completely on wire racks.

Mix the filling ingredients until smooth and spreadable. Spread on the bottom of one cookie and put another cookie on top, sandwich style. Let the frosting set.
