2 large eggplants, sliced into 1/4-inch thick slices
3 cups marinara sauce
2 cups ricotta cheese
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 egg
2 tablespoons fresh basil, chopped
1 teaspoon garlic powder
Salt and pepper to taste
Olive oil for brushing

Directions:

Preheat oven to 375°F (190°C).
Salt the eggplant slices and let them sit for 20 minutes to draw out moisture. Rinse and pat dry.
Brush each slice with olive oil and bake for 15 minutes, or until slightly tender.
In a bowl, mix ricotta, Parmesan, egg, basil, garlic powder, salt, and pepper.
Spread a cup of marinara sauce at the bottom of a baking dish.
Layer eggplant slices, ricotta mixture, mozzarella, and sauce.
Repeat the layers and top with cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes or until cheese is bubbly and golden.
