1 stick butter
3 T erythritol sugar
2 eggs
2 T coconut flour
2 T cocoa powder
1 serving peppermint keto chow
1 tsp baking powder
2 T sour cream
½ t vanilla
2 drops peppermint oil
2 T crushed sugar free peppermint candies
½ c sugar free chocolate chips
1 T crushed sugar free peppermint candies mixed with red food dye for sprinkling at the end

Cream the butter and erythritol together. Add eggs. Mix until smooth and combined. Sift together your dry ingredients (flour, cocoa, keto chow, baking powder) into a separate bowl, then add into creamed mixture. Mix until well combined. Add in your sour cream, peppermint oil and vanilla. Combine together. Then stir in your chocolate chips.
Scoop onto parchment paper on a cookie sheet into 2 T size balls. Bake at 350 degrees for 10 minutes. Add a pinch of the colorful crushed peppermint on top when they come out of the oven. Cookies will still be soft, let them cool for 5 minutes before enjoying.
