4 C diced potatoes
1 medium onion diced
3 T flour
1 T butter
1 qt. milk
1 egg beaten
salt and pepper to taste
parsley

Directions:
Directions:
Boil diced potatoes and onion in a small amount of water (just enough to cover) cook until soft. Add milk, salt and pepper.

In a skillet, melt the butter and add the flour. Stir for about a minute, careful not to let it burn. Slowly add flour mixture to the potato mixture.

Beat the egg and add a teaspoon of water. Slowly add to the soup. Cook on medium heat for a few minutes to cook the egg. reduce to a simmer. Will thicken as it simmers.

Garnish with Parsley.
