Mix thoroughly:
1 cup of soft shortening (oleo) or part butter
3/4 cup of sugar
1 cup of mashed cooked carrots
2 eggs
Stirred together and then stir in:
2 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of shredded coconut optional

Bake on lightly greased cookie sheet when touched lightly almost no imprint remains at 400° 8 to 10 minutes. Frost cooled with orange butter icing.
