1 Hoecake Cornbread (broken into small pieces)
3-4 Boiled Eggs, chopped
1 Medium Onion, Chopped
Chicken Stock
Giblets (boiled and chopped)
1 Sleeve Saltine Crackers (crushed)
1-2 stalks celery, finely chopped (Optional)
Giblets (cooked and chopped)
Salt
Pepper
Ground Sage
Poultry seasoning

Make cornbread (DO NOT use corn muffin mix or other mixes - use white, self rising cornmeal for best results - mixes will have sugar and will make dressing sweet

Add 1 egg, buttermilk, salt and pepper to cornmeal and mix- should be consistency of applesauce or pancake mix (should not be dry)

Pour into greased cast iron skillet and bake in the open at 400 degrees until golden brown- should pull away from sides of pan when done - top may be cracked (approximately 25-30 minutes)

Boil chicken or turkey giblets until they are done. Use the broth from the boiled giblets as liquid in your dressing

Mix all other ingredients with cornbread - use potato masher to mask bread and crackers so there are no lumps or large pieces. Add seasonings to taste - the more sage the better the dressing - refrigerate left over - may add broth or water and mix again to reheat if needed.

Always a favorite in our house - simple to make and feeds a good crowd. There are no real measurements - it all depends on the size of the hoecake of cornbread - if a very small cake of bread use less of the other ingredients - you decide - you can more or less of anything as you and your family like
