Buttercream Icing - Regular and Chocolate


Ingredients:

For a 2 layer cake (8 inch cake pan)
-3 cups icing sugar
-1/2 cup butter, room temperature
-1 tsp vanilla extract
-up to 3 tbsp milk

For a 2 layer cake (9 inch cake pan)
-4 cups icing sugar
-3/4 cup butter, room temperature
-1 tsp vanilla extract
-3 tbsp milk

For Chocolate Buttercream
-about 1/4 cup baking cocoa powder

Directions:
Directions:
1. After measuring the icing sugar, sift it into a bowl. If you are making chocolate buttercream, also sift the cocoa in with the icing sugar.
2. Add the butter to your stand mixer and beat until light and fluffy (or use hand mixer). Beat about 3 or 4 minutes.
4. Add the icing sugar gradually to the butter mix. Beat with each addition of the icing sugar.
5. When mix becomes too stiff to beat easily, add the vanilla and then gradually the milk. If the icing is soft, you will not need all the milk. If the icing is stiff you may need all the milk, or even more.
6. If you are colouring the buttercream for a decorated cake add it now
7. Cover the mixing bowl with saran wrap if you are not immediately icing the cake.
