1 Whole chicken, boiled, deboned and diced or tore up
Potatoes, diced (number is up to you - more potatoes = more stew
16 oz whole kernel corn, frozen or canned
16 oz baby butter beans, canned or frozen
16 oz can stewing tomatoes
1 Can rotel tomatoes with chili
1 Large Onion, chopped
Lemon Juice to taste
Ketchup
Ground beef (1 to 1 1/2 lbs, cooked and crumbled)
Hot sauce to taste
Salt and Pepper to taste

This is a taste and season as you go - Mix all main ingredients together - I also use some of the chicken stock from the boiled chicken -

Ketchup add to the tomato base while the lemon juice cuts the sweetness ( You decide how hot, how sweet or how sour you wish it to taste)

Bring to a boil, reduce heat and simmer until it taste right

This is up to you regarding heat, sweetness - I like lots of meat so I use the whole chicken and add the ground beef - freezes well - reheats very well.
