2 sticks (1 c.) butter
½ c. white sugar
1 egg yolk
2 c. flour
½ c. ground almonds
-or-
1½ tsp. vanilla or almond flavoring (beaten into the egg yolk)

Extra white sugar for dipping

Preheat oven to 375 degrees F.

Mix all of the ingredients together. Form into small balls about the size of a walnut. Dip each ball into white sugar, place on cookie sheet, and press them down with a small juice glass. Bake 8 to 10 min. at 375.

Grandma (Mareva) Willrett used to put a pecan half in the middle of these cookies before baking. They are delicate and delicious! You can also use colored sugar instead of white for dipping if using for a Christmas plate. ~Joanne
