Grandma Kay's Carrot Cake Recipe

3 C Carrots grated
2 C Sugar
1/2 C Vegetable oil
4 Eggs
2¼ C Flour
2 tsp Baking soda
2 tsp Salt
1 tsp Cinnamon
1/2 C Pecans chopped

Frosting:
5 oz Cream cheese, softened
1/2 C Butter, softened
2 Lbs Powdered sugar
2 tsp Vanilla

Beat all ingredients until smooth. Frost cooled cake, then refrigerate. Freezes well.

Directions:

Heat oven to 350º
In mixing bowl, cream together sugar and oil. Add eggs one at a time, mixing well.
Mix in dry ingredients
Fold in carrots and pecans.

Pour into 3 - 9" cake pans.
Bake 25 minutes

OR
3 dozen cupcakes -- bake 20 minutes.
