Ingredients:  
- 7/8 cups of butter softened (¾ plus 2 Tbsp)
- 1½ cups white sugar
- 2 eggs
- grated rind & juice of 1 lemon (1Tbsp of rind and ¼ of juice)
- 1 cup of unsweetened medium coconut
- 2 cups of all purpose flour
- 1 tsp of baking soda
- pinch of salt

Directions:
Directions:
- In a medium bowl, cream sugar & butter until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in lemon juice, rind and coconut.

- In a small bowl, whisk together flour, baking soda and salt.
- Add to butter mixture & mix just until blended.
- Chill in fridge for 2 hours.
- Preheat oven to 325º F.
- Drop by tsp onto greased cookie sheet or parchment paper leaving 2 inches between
(Do 3 across & 5 down - makes 60 cookies).
- Bake for 13 min or until edges start to crisp and turn light golden.
