1 cup butter
1 cup brown sugar, packed
1 large egg
1 tsp vanilla
2 ⅓ cups flour
½ cup special dark cocoa powder
½ tbsp espresso powder
1 tsp baking powder
½ tsp salt

SUGAR FOR ROLLING:
½ tbsp special dark cocoa powder
½ tbsp espresso powder
1½ superfine sugar

Directions:

1. Cream butter and sugar until fluffy. Beat in egg and vanilla. In separate bowl, combine flour cocoa powder, baking powder and salt. Add flour mixture to batter slowly and blend thoroughly. Turn out dough and knead until smooth. Cover and refrigerate for 2 - 3 hours.

Preheat oven to 350ºF. Let dough sit out for a few minutes to soften slightly. Roll in to golf-ball sized balls and roll in sugar mix. Press dough with cookie stamps on baking sheet, or flatten slightly using the bottom of a glass (or something similar). Bake 10 - 12 minutes. Cool on wire rack.
