COOKIE DOUGH

½ Cup Crisco
2 eggs
1 tablespoon vanilla
1 tablespoon baking powder
1 cup sugar
2 tablespoons cream
3½ cups of Gluten Free flour (King Arthur or Bob Mills)

FROSTING

½ cup butter
1 8 ounce package of cream cheese softened
4 cups of powdered sugar
3 teaspoons vanilla

Cream shortening and sugar until light and fluffy. Add 2 eggs, well beaten. Mix in cream and vanilla. Sift flour and baking powder together. Add to cream mixture. Roll out ⅛ to ¼ inch thick. Bake at 375º for 8 minutes or until light brown.

FROSTING

Cream butter, cream cheese. Gradually add sugar and vanilla. Beat until smooth and creamy. Add food coloring as needed.

This recipe is from Kaiti Jones. This recipe works especially well using gluten free 1:1 flour. It is suggested that you sift the flour before adding to recipe.

Kaiti recommends cutting frosting recipe in half, as this recipe makes a lot. Also, this recipe takes food coloring real well. You can always freeze frosting and use at a later date.
