6 cups flour
1 pound brown almonds, ground
1 pound butter
2 cups icing sugar
1 tsp. cinnamon
Lemon rind
2 eggs

Directions:
Directions:
Mix all ingredients by hand until dough forms into a ball. Put the dough in a bowl and refrigerate for an hour. Grease and flour metal cookie molds. The more pieces you have, the better, since this recipe yields a lot of cookies. Put a bit of dough in the buttered and floured molds. The cookies will rise a bit, so don’t stuff the molds too much. Bake at 350º for 10 minutes. Let cool before taking cookies out of the molds. Dust cookies with icing sugar for that finishing touch!

The main ingredients in these Christmas cookies are ground nuts and a lot of love! A teaspoon of cocoa and three grated cloves will make an even spicier dough—a nice variation. Mom never followed a recipe to the T, but one thing is certain: they were all delicious!
