1 c. unsalted butter, room temperature
½ c. granulated sugar
1 c. dark brown or light brown sugar
2 eggs
1 tsp. vanilla
6 tbsp. Jim Beam Honey Bourbon (or salted caramel whiskey)
2 c. all purpose flour
2 tsp. baking soda
1 tsp. salt
2 c. rolled oats
8 oz. butterscotch chips (or chocolate chips)

Preheat oven to 375ºF. Combine flour, baking soda and salt in medium mixing bowl and whisk together. Cream together the butter and sugars, until light and fluffy. Add eggs one at a time. Add vanilla, bourbon/whiskey, mixing until well combined. Fold in dry ingredients gradually. Add chips and oats, mixing to incorporate thoroughly. Using cookie scoop to transfer balls of dough to cookie sheet, placing them 2 " apart.
Bake 9 minutes or until golden brown.
