5 lb. chicken (white meat)
5 lg. celery stalks, divided
4 lg. carrots, halved, divided
3 lg. onions, quartered, divided
¼ tsp. pepper
1 tsp. chopped parsley
Kluski or egg noodles
Water and/or chicken bouillon, if desired as broth extender
Egg dumplings, if desired

Directions:
1. In an 8 qt. stockpot, place 5 lb. chicken, 4 lg. celery stalks, 3 lg. carrots (halved), 2 lg. onions (quartered), and 1/4 tsp. pepper. Fill pot with water or broth extender. Boil for at least 2-3 hours.
2. Strain above and discard vegetables. Put broth back into pot. Add 1 lg. chopped onion, 1 minced carrot and 1 stalk of finely sliced celery. Cook on low for 1 hour.
3. Shred or cut chicken from bones (using only white meat). Add the chicken and 1 tsp. chopped parsley to the pot. Simmer for 1 or more hours.
4. Add Kluski noodles or egg noodles. Cook as directed.

Enjoy! You may like to add egg dumplings, and your favorite spices to your taste.
