2 c. sugar
1 1/2 c. vegetable oil
4 eggs

2 c. flour
2 t. baking soda
1 t. cinnamon
1/2 t. allspice
3 c. shredded carrots
Optional (and more delicious) walnuts

Directions:

Beat oil and sugar, add eggs one at a time.

Beat in remaining cake ingredients.

Pour batter into greased 9" x 13" baking pan.

Bake at 350 degrees for 45 minutes.

(I also like to make this as cupcakes)

1 lb. powdered sugar
8 oz. cream cheese
1 stick butter
2 t. vanilla

My grandma made this carrot cake for us every summer when we visited her in Ohio. It's the only carrot cake I want to eat now, none compare. Enjoy!
