2-3 strips bacon
1 onion, finely chopped
2 med. potatoes, diced
1 can creamed corn
1 can corn kernels, drained (can also use fresh corn cut off the cob)
1 c. milk
1 can evaporated milk
1 1/2 tsp. corn starch
fresh thyme

Directions:
Directions:
1. Fry the bacon in a pan, remove and dry on paper towl.
2. Remove excess grease from pan; sauté onion until soft.
3. Add potatoes and enough water to cover. Cook until potatoes are almost done.
4. Add the creamed corn, corn kernels, milk, evaporated milk.
5. Heat, then add corn starch mixed with water to thicken, if desired.
6. Add pepper to taste and serve with crumbled bacon and fresh thyme.
