Use a cast iron skillet for this recipe

4 Idaho or russet potatoes
oil
salt and pepper to taste

This dish does not have an exact recipe, but it goes something like this...

Peel the potatoes and the rinse them off. Next, cut the potatoes to your liking. Our family liked the potatoes not too thick, but more on the thinner side.

Pour enough oil in the cast iron skillet to cover the bottom. Make sure the skillet has time to heat up. Arrange the potato slices in one layer. Cook on medium heat. At this point, you may want to cover the pan with a lid, but you do not have to. Be sure to keep an eye on the potatoes, so they do not burn. Turn the potatoes over when the downside gets brown. When both sides are brown and crispy, remove with a slotted spoon and place the potatoes on a paper towel or newspaper in order to drain.
Salt and pepper to taste.

Memaw's fried potatoes were a favorite part of a meal. Again, she did not write down how to make them, but as little girls running in and out of the kitchen, we were able to get the gest of what she was doing.
