¾ c. butter, softened
1 c. sugar
¼ c. molasses
1 large egg
2¼ c. flour
2 t. ginger
1 tsp, baking powder
1¼ tsp. cinnamon
½ tsp. cloves
¼ tsp. salt
½ c. candied ginger
Sugar to coat

Directions:
Cream together butter, sugar, and molasses, in large bowl with mixer on medium high speed, until light and fluffy. Beat in egg until light and fluffy. Pour in dry ingredients, mix on low speed until fully incorporated. Cover and refrigerate batter for at least 1 hour but for chewier cookies refrigerate over night. Roll ¼ c. dough into balls, roll into the sugar. Place on cookie sheet 2 to 3 inches apart. Bake 13-15 minutes. Don’t over bake.
