2 cups sugar
1 1/4 to 1 1/2 cups oil
4 eggs, beaten
2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 cup chopped pecans or walnuts
3 cups grated carrots
1 cup raisins

Directions:

1. In large bowl, mix sugar, oil and beaten eggs
2. Sift flour, salt, baking soda, baking powder, and cinnamon together
3. Add flour mixture to egg mixture in four parts
4. Fold in nuts, carrots, and raisins. Mix well, but do not overmix
5. Bake in slightly oiled tube pan or bundt pan at 350 degrees for 55-60 minutes. Check with a toothpick. Cool in the pan for 10- 15 minutes, then remove from pan.

1 (8 Ounce) package of cream cheese
1 cup sifted powdered sugar
