Cookie:
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt

Icing:
3 tbsp butter
4 tsp milk
½ cup brown sugar
1 cup powdered sugar
1 tsp vanilla

Cookie:
In a mixing bowl cream together the shortening and sugar until fluffy. Add egg and mix well. Add all of the dry ingredients and mix well. Drop by spoonful onto a greased cookie sheet. Bake at 350º for 10-12 minutes. Cool completely before icing.

Icing:
In a saucepan combine the first three ingredients and cook until sugar is dissolved. Remove of the heat and add powdered sugar and vanilla. Mix until creamy. If icing is too thick add drops of milk and stir until correct consistency. The icing thickens as you use it so you may need to add drops of milk throughout the process.
