1 cup Powdered Sugar
1 cup White Sugar
¾ cup + 2 Tbs Butter
¾ cup + 2 Tbs Vegetable Oil
1 tsp Cream of Tartar
5 cups White Spelt Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Vanilla

Wheat Version:
1 cup Powdered Sugar
1 cup White Sugar
1 cup Butter
1 cup Vegetable Oil
1 tsp Cream of Tartar
5 cups All Purpose Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Vanilla

Directions:
Directions:
Mix powdered sugar, white sugar, and butter until fluffy. Add vegetable oil, cream of tartar, salt, baking soda, and vanilla. Gradually add 1 cup of flour at a time, mixing after each cup. Cover & chill the dough overnight. When ready to bake, remove from the fridge. Roll the dough in small balls then flatten the dough ball with a sugar-bottomed flat glass, coating the cookie with a top layer of sugar. Bake 350ºF for 10-12 minutes.

Note for Holidays you can use colored sugar for coating cookies.
