115 grams sugar
12 grams Earl Grey tea
255 grams flour
90 grams rice flour
3 grams salt
1 teaspoon vanilla
Zest from half an orange or 1 lemon
230 grams butter, cubed and at room temperature

Directions:
Directions:
In a food processor, pulse together the sugar and tea, until the tea is just spotted throughout the sugar. Add the flours, salt, vanilla, and zest. Pulse to combine. Add the butter and pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 ½-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 1 hour.

Preheat oven to 275°F (250°F fan).

Slice the log into ⅓-inch thick disks. Place on parchment lined baking sheets, 1 inch apart. Bake until the edges are just brown, about 35 to 40 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.
