¼ lb butter, softened
¼ cup ricotta
1 tsp. vanilla
1 cup sugar
1 egg
2 cups flour
½ tsp. baking soda
½ tsp. salt

Directions:
Directions:
Blend together ricotta and butter until creamy. Add vanilla and mix well. Add sugar - gradually beating until well blended, and then add the egg and mix well. Slowly stir in dry ingredients. Drop by spoonful on greased cookie sheet. Bake at 350° for 10 minutes.
