1 1/2 cups flour
1 teasp baking soda
1/4 teasp salt
1/2 cup butter
1 cup light brown sugar
1 cup smooth peanut butter
1 large egg
1/2 teasp vanilla
1/2 sugar to roll the dough in

peanut butter filling

1/4 butter
1/2 peanut butter
1 1/2 cup powdered sugar
2 tablespoon whole milk
1/4 teasp vanilla

Directions:

preheat oven 350

whisk flour, baking soda, and salt set aside

using mixer cream butter, brown sugar,peanut butter. Add the egg and vanilla

gradually add dry ingredients.

divide dough into small balls about 1 in diameter

form each ball into a log shape then roll in sugar

place logs on cookie sheet about 2 inches apart.

using a fork make a criss cross pattern in logs.then pinch the middle of cookie so you have a peanut shape.

bake 10-12 minutes. until ligjtlu browned on edges but soft in center.

allow cookies to cool on baking sheet 5 minutes before removing to wire rack

filling
mix butter on med speed till fluffy

mix in peanut butter , 1 cup powdered sugar, until smooth

spoon 1 tablespoon filling on one cookie and top with another cookie.
